Description

A delightful combination of juicy shrimp, fresh spinach, and sweet cherry tomatoes tossed with pasta in a light garlic butter sauce. This quick and easy dish is packed with flavor and perfect for a satisfying meal any day of the week.


Ingredients

8 oz linguine or spaghetti

2 tbsp olive oil

3 tbsp unsalted butter

4 cloves garlic, minced

1 lb shrimp, peeled and deveined

1 tsp red pepper flakes (optional)

Salt and black pepper to taste

1 cup cherry tomatoes, halved

2 cups fresh spinach

½ cup grated Parmesan cheese

½ cup reserved pasta water

1 tbsp fresh lemon juice

Optional Add-ins:

½ cup heavy cream (for a creamy version)

Extra Parmesan for serving

Fresh basil for garnish


Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Sauté the Shrimp: Heat 2 tbsp olive oil in a large skillet over medium heat. Season the shrimp with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes per side until pink and opaque. Remove from the pan and set aside.
  3. Cook the Garlic & Tomatoes: Reduce the heat to medium-low, melt 3 tbsp butter, and sauté the minced garlic for 30 seconds. Add the cherry tomatoes and cook for 2-3 minutes until softened.
  4. Add the Spinach: Stir in the fresh spinach and cook for 1-2 minutes until wilted.
  5. Combine Everything: Return the cooked shrimp to the pan. Add the drained pasta and ½ cup of reserved pasta water, tossing everything together. Stir in the lemon juice and Parmesan cheese.
  6. Final Touches & Serve: Adjust seasoning if needed. For a creamy version, stir in ½ cup of heavy cream before serving. Garnish with extra Parmesan and fresh basil, then serve immediately.
