Ingredients
1 recipe pie crust (store-bought or homemade)
2 cups mashed sweet potatoes (cooked fresh or canned, unsweetened)
1/2 cup brown sugar
1/4 cup granulated sugar
2 large eggs
2/3 cup evaporated milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Instructions
1. Roll out the pie dough and cut into circles to fit mini tart pans or muffin tins. Gently press into the molds and set aside.
2. In a large mixing bowl, combine mashed sweet potatoes, brown sugar, and granulated sugar. Mix until smooth.
3. Add eggs, evaporated milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Blend until fully combined and creamy.
4. Spoon the filling into the prepared crusts, filling each about 3/4 full.
