Ingredients

3 tablespoons butter

3 tablespoons all-purpose flour

2 cups whole milk

4 ounces cream cheese, softened

1 cup shredded cheddar cheese, divided

2 pounds spinach (fresh or frozen and drained)

1⁄4 teaspoon ground nutmeg

1⁄2 teaspoon salt

1⁄2 teaspoon black pepper

1⁄3 cup grated Parmesan cheese

1⁄2 cup Panko breadcrumbs


Instructions

1. Preheat oven to 375°F and butter a 9×13 inch baking dish.

2. If using fresh spinach, blanch it in boiling water, then drain. If using frozen spinach, thaw and squeeze out excess moisture.

3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to form a roux.

4. Gradually whisk in the milk until smooth. Cook for 2–3 minutes until slightly thickened.

5. Stir in the cream cheese and mix until fully melted and smooth.

6. In a large bowl, combine the spinach, cream sauce, half the cheddar, nutmeg, salt, and pepper. Mix well.

7. Transfer the mixture into the prepared baking dish.

8. Top with remaining cheddar, Parmesan, and Panko breadcrumbs.

9. Bake uncovered for 25–30 minutes, until the top is golden and bubbling.

10. Let rest for 5 minutes before serving.

Notes

For best results, squeeze the spinach as dry as possible to prevent a watery casserole.

Add a pinch of garlic powder or sautéed onions for extra flavor depth.
