Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, diced
1 teaspoon ground turmeric
1 teaspoon ground ginger (optional)
Salt and black pepper, to taste
6 cups chicken broth
2 cups shredded cooked chicken
1 cup frozen peas
Juice of 1/2 lemon
2 tablespoons fresh parsley or cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes.
- Stir in minced garlic and cook for another minute.
