Ingredients
2 cups mashed sweet potatoes
3/4 cup brown sugar
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
3/4 cup evaporated milk
1 1/2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 9-inch deep-dish pie crust (homemade or store-bought)
Instructions
1. Roast or boil sweet potatoes until fork-tender, then peel and mash until smooth.
2. Preheat oven to 350°F (175°C).
3. In a large bowl, mix mashed sweet potatoes, brown sugar, granulated sugar, melted butter, eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until smooth.
4. Place pie crust in a 9-inch deep-dish pie pan and prick bottom with a fork. Prebake for 10 minutes.
5. Pour sweet potato mixture into crust and smooth the top.
6. Bake for 50–60 minutes until center is set and toothpick comes out mostly clean.
7. Cool completely, then chill for 2 hours before slicing.
8. Serve with whipped cream or your favorite topping.
