500g boneless skinless chicken thighs

3 cloves fresh garlic, minced

1 cup grated parmesan cheese

1/2 cup all-purpose flour

1/4 cup cornstarch

2 eggs, beaten

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

3 tablespoons unsalted butter

2 teaspoons Cajun seasoning

1 bunch broccolini

2 tablespoons olive oil

Salt and black pepper to taste


Instructions

1. Cut the chicken thighs into bite-sized pieces. Season with salt, pepper, and minced garlic.

2. In a bowl, combine flour and cornstarch. Dredge chicken in the flour mix, dip into beaten eggs, then coat in grated parmesan.

3. Heat olive oil in a skillet over medium-high. Cook chicken bites in batches, 3–4 minutes per side, until golden and cooked through. Drain on paper towels.

4. Toss broccolini with olive oil, salt, and pepper. Roast at 425°F for 12–15 minutes until charred and tender.

5. In a saucepan, melt butter. Stir in Cajun seasoning and sun-dried tomatoes. Add cream and simmer to thicken slightly. Stir in parmesan until smooth.
