Ingredients

8 slices rye bread

12 ounces corned beef

8 slices Swiss cheese

1 cup sauerkraut, drained well

1/3 cup Russian dressing

4 tablespoons unsalted butter, softened

1/4 teaspoon black pepper


Instructions

1. Drain the sauerkraut very well and gently press out excess moisture with paper towels.

2. Lay out the bread slices and spread Russian dressing on one side of each slice.

3. Build 4 sandwiches by layering 1 slice Swiss cheese, corned beef, sauerkraut, a little black pepper, and another slice of Swiss cheese between the bread.

4. Spread softened butter on the outside of each sandwich.

5. Heat a skillet or griddle over medium heat.

6. Cook the sandwiches for 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.

7. Let the sandwiches rest for 1 minute, then slice and serve hot.

Notes
