Ingredients

2 chicken breasts thinly sliced

2 tablespoons olive oil

4 cloves garlic minced

1 cup artichoke hearts chopped

2 cups fresh spinach

1 cup mushrooms sliced

1 cup heavy cream

4 ounces cream cheese

1 cup Parmesan cheese shredded

1 cup mozzarella cheese shredded

1/4 cup fresh basil chopped

3 cups broccoli florets

12 ounces pasta (fettuccine or penne)

Salt and pepper to taste

Zest of 1 lemon

1/4 teaspoon dried oregano

1/4 teaspoon dried thyme


Instructions

1. Slice chicken and season with oregano, thyme, lemon zest, salt, and pepper. Sear in olive oil until golden and cooked through. Set aside.

2. Toss broccoli with olive oil, garlic, salt, pepper, and Parmesan. Roast at 425°F for 20 minutes until crispy.

3. Sauté mushrooms in the same pan, add garlic, then deglaze with water or broth. Stir in cream cheese and heavy cream until smooth.

4. Fold in basil and Parmesan. Add spinach and artichokes to the sauce until wilted. Return chicken and simmer gently.
