Description
Juicy chicken, colorful vegetables, and a glossy homemade teriyaki sauce come together in this quick weeknight stir-fry. Serve over nutty wild rice for a balanced, family-friendly dinner with protein, fiber, and big flavor.
Ingredients
1 cup wild rice, uncooked
1 lb boneless skinless chicken, thinly sliced
1 tbsp neutral oil (canola or avocado)
2 cups broccoli florets
1 medium red bell pepper, thinly sliced
1 cup sugar snap peas, trimmed
1 large carrot, thinly sliced on the bias
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1/3 cup low-sodium soy sauce
3 tbsp honey
2 tbsp rice vinegar
2 tsp toasted sesame oil
1.5 tbsp cornstarch
1/2 cup water
2 tbsp green onions, sliced (optional)
1 tsp sesame seeds (optional)
1 tsp sriracha, to taste (optional)
Instructions
1. Rinse and cook wild rice per package directions; keep warm.
2. Whisk soy sauce, honey, rice vinegar, sesame oil, cornstarch, and water until smooth.
3. Heat a large wok or skillet over medium-high; add neutral oil.
4. Sear chicken 5-6 minutes until cooked through and lightly golden; remove to a plate.
5. Stir-fry broccoli, bell pepper, snap peas, and carrot 3-4 minutes until crisp-tender.
6. Add garlic and ginger; cook 30 seconds until fragrant.
7. Return chicken and any juices to the pan; toss with vegetables.
8. Pour in teriyaki mixture; stir 1-2 minutes until thick and glossy.
9. Adjust thickness with a splash of water; add sriracha to taste.
10. Serve over wild rice; garnish with green onions and sesame seeds.
Notes
Slice chicken thinly against the grain for tenderness and quick cooking.
Start wild rice first; it takes longer than the stir-fry.
