Ingredients

2 cups granulated sugar

1 cup light brown sugar

1 cup heavy cream

4 tablespoons unsalted butter

1 teaspoon vanilla extract

2 cups pecan halves (lightly toasted)

1/4 teaspoon salt


Instructions

1. Lightly toast the pecan halves in a dry skillet over medium heat for 4-5 minutes until fragrant. Set aside.

2. In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, and butter. Stir over medium heat until the sugars dissolve.

3. Attach a candy thermometer and cook until the mixture reaches 238°F (soft-ball stage), stirring occasionally.

4. Remove from heat and stir in the vanilla extract and toasted pecans. Stir constantly until the mixture thickens and becomes less glossy.

5. Quickly drop spoonfuls onto parchment paper. Let cool and set for about 30 minutes before serving or storing.

Notes

Use a candy thermometer for perfect results—pralines need to hit exactly 238°F.

Don’t overmix after removing from heat; work quickly to drop them before they harden.
