Ingredients
1 cup all-purpose flour

1/2 cup diced Granny Smith apple
1/2 cup diced Honeycrisp apple
1 teaspoon cornstarch
1 teaspoon lemon juice
1/4 cup caramel sauce (optional)
Instructions
1. In a small saucepan, cook the apples with brown sugar, cinnamon, nutmeg, and lemon juice until softened. Stir in cornstarch and let thicken. Cool the filling.
2. In a bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
3. Add the egg yolk and vanilla extract; mix well.
4. Slowly add flour, cinnamon, and salt to form a soft dough.
5. Scoop dough into balls and place on a parchment-lined baking sheet. Flatten slightly and create a well in the center.
