Ingredients

1 lb Italian sausage

6 slices thick-cut bacon

1 medium yellow onion, chopped

3 cloves garlic, minced

4 cups chicken broth

3 cups Yukon gold potatoes, diced

1 cup heavy cream

2 cups kale, chopped

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste


Instructions

1. Cook chopped bacon in a large pot until crispy. Remove and set aside, leaving a bit of fat in the pot.

2. Add sausage to the pot and brown it thoroughly, breaking it into crumbles. Drain excess fat if needed.

3. Stir in chopped onion and cook until translucent. Add garlic and red pepper flakes, sauté until fragrant.

4. Pour in chicken broth and add potatoes. Bring to a boil, then reduce to a simmer until potatoes are fork-tender.

5. Stir in chopped kale and cook until wilted, about 5 minutes.

6. Lower the heat and add heavy cream. Let it warm without boiling. Season with salt and pepper.

7. Return bacon to the pot. Serve hot, optionally garnished with more bacon or parmesan.

Notes

For a lighter version, swap heavy cream for half-and-half or coconut cream.

To freeze: make without cream and add it after reheating for best texture.
