1 (5 to 7 lb) bone-in prime rib roast
4 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1 tablespoon fresh thyme leaves
1 tablespoon kosher salt
2 teaspoons freshly cracked black pepper
3 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon horseradish (optional)
2 lb baby potatoes, halved
1 tablespoon butter, melted
Fresh parsley, chopped (for garnish)
Instructions
- Bring the prime rib to room temperature and preheat oven to 450°F (230°C).
- In a bowl, mix garlic, rosemary, thyme, salt, pepper, olive oil, Dijon mustard, and horseradish.
- Rub the mixture evenly over the roast. Let sit for 30 minutes.
- Place the roast in a rack inside a roasting pan, fat side up.
- Roast at 450°F for 20 minutes.
- Lower oven temperature to 325°F (165°C) and continue roasting:
- 120°F internal temp for rare
- 130°F for medium-rare
