Ingredients
8 large eggs
1 cup cottage cheese
1 cup shredded cheddar cheese, divided
6 slices bacon, cooked and chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 tablespoon chopped chives or parsley
Cooking spray or 1 teaspoon butter for greasing the pan
Instructions
1. Preheat the oven to 300°F and grease a 12-cup muffin tin with cooking spray or butter.
2. Add the eggs, cottage cheese, salt, black pepper, and garlic powder to a blender. Blend until completely smooth and slightly frothy.
3. Divide the chopped bacon and about 3/4 cup of the shredded cheddar evenly between the muffin cups.
4. Pour the egg mixture into each muffin cup, filling each one about three-quarters full.
5. Sprinkle the remaining cheddar cheese over the tops.
6. Bake for 22 to 28 minutes, until the egg bites are set in the center and lightly golden on top.
7. Let them cool in the pan for 5 minutes before removing.
8. Garnish with chopped chives or parsley and serve warm.
