If you love chocolate desserts, cherry desserts, cupcake recipes, and easy recipe ideas that double as beautiful party food, this is one of those food ideas you will want to make again and again.

Ingredients

1 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

3/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1/2 cup whole milk

1/2 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup hot coffee or hot water

3/4 cup thick cherry filling

1 cup heavy whipping cream

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1/3 cup chocolate shavings

12 fresh cherries

Instructions

1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.

2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3. Add the eggs, milk, oil, and vanilla extract, then mix until combined.

4. Stir in the hot coffee or hot water until the batter is smooth and thin.

5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

6. Bake for 18 to 22 minutes, or until a toothpick inserted near the edge comes out clean.

7. Cool the cupcakes completely on a wire rack.

8. Core the center of each cupcake and fill with cherry filling.

9. Beat the heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.

10. Pipe or spoon the whipped cream onto each cupcake.

11. Top with chocolate shavings and a fresh cherry.

12. Chill lightly before serving for the best texture.

Notes

Do not fill or frost the cupcakes until they are completely cool, or the cherry filling can loosen and the whipped cream may melt and slide off.
