Ingredients

2 blood oranges

1 large avocado

4 cups arugula or mixed greens

1/4 small red onion

1/4 cup crumbled feta cheese

3 tablespoons shelled pistachios

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon honey

1/4 teaspoon salt

1/8 teaspoon black pepper

Instructions

1. Peel the blood oranges and slice them into rounds or segments, removing any seeds.

2. Slice the avocado and thinly slice the red onion.

3. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.

4. Arrange the arugula or mixed greens on a serving platter or in a large bowl.

5. Top the greens with the blood oranges, avocado, red onion, feta, and pistachios.

6. Drizzle the dressing over the salad just before serving.

7. Toss gently if desired and serve immediately.

Notes

Slice and add the avocado right before serving so it stays fresh and creamy instead of turning brown or mushy.
