Ingredients
8 oz linguine
12 oz New York strip steak
1 tbsp Cajun seasoning
2 tbsp olive oil
3 tbsp butter
3 cloves garlic, minced
3/4 cup heavy cream
1 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped parsley (optional)
Instructions
1. Pat steak dry and season generously with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear steak for 3–4 minutes per side. Add 1 tbsp butter and minced garlic during the final minute and baste. Remove steak and let rest.
3. Cook linguine in salted water until al dente. Reserve 1/2 cup pasta water. Drain pasta.
4. In the same skillet, melt remaining butter and sauté garlic until fragrant.
5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
6. Add reserved pasta water as needed to loosen sauce. Toss in linguine and mix until coated.
7. Slice rested steak against the grain. Plate pasta and top with steak slices.
8. Garnish with parsley and serve hot.
Notes
For extra heat, add a pinch of cayenne pepper or hot sauce to the sauce.
Sirloin or ribeye can also be used if New York strip isn’t available.
