Ingredients

2 large boneless skinless chicken breasts

1 medium yellow onion, diced

4 garlic cloves, minced

2 tablespoons flour

1.5 cups chicken broth

3 tablespoons butter

0.25 cup heavy cream

6 Yukon Gold potatoes, peeled and cubed

0.5 cup shredded cheddar cheese

0.25 cup milk

2 tablespoons chopped parsley

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

1. Peel and cube the potatoes. Boil in salted water until fork-tender, about 15 minutes.

2. While potatoes cook, season chicken with salt, pepper, and garlic powder.

3. Sear chicken in a skillet with butter over medium heat until golden and cooked through. Set aside.

4. In the same pan, add more butter and sautée diced onions until soft. Add garlic and cook 1 minute.

5. Stir in flour and cook 2 minutes, then slowly whisk in chicken broth. Simmer until thickened.

6. Add cream to the gravy and return chicken to the skillet. Let simmer 5 minutes.

7. Drain the potatoes and mash with butter, milk, cheddar cheese, salt, and pepper until creamy.

8. Plate mashed potatoes, top with chicken, spoon over gravy, and garnish with chopped parsley.

Notes

Yukon Gold potatoes provide a naturally creamy base—avoid waxy or starchy substitutes.

For deeper flavor, try caramelizing the onions slowly over low heat before adding garlic.
