Ingredients
1 lb chicken breast, cut into bite-sized pieces
2 tbsp cornstarch
1/2 tsp salt
1/4 tsp black pepper
2 tbsp vegetable oil
3 cups broccoli florets
1 red bell pepper, chopped
1 cup shelled edamame
3 green onions, sliced
3/4 cup cashews
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1/4 cup low-sodium soy sauce
1/2 cup chicken broth
2 tbsp honey
1 tbsp rice vinegar
1 tsp sesame oil
1/4 tsp crushed red pepper flakes
Instructions
1. Toss the chicken pieces with cornstarch, salt, and black pepper until evenly coated.
2. In a small bowl, whisk together soy sauce, chicken broth, honey, rice vinegar, sesame oil, garlic, ginger, and crushed red pepper flakes.
3. Heat vegetable oil in a large skillet or wok over medium-high heat.
4. Add the chicken and cook for 5 to 6 minutes, stirring occasionally, until lightly browned and nearly cooked through.
5. Add the broccoli and red bell pepper, then stir fry for 3 to 4 minutes until slightly tender but still crisp.
6. Stir in the edamame and half of the green onions.
7. Pour the sauce into the skillet and cook for 2 to 3 minutes, stirring, until thickened and glossy.
8. Stir in the cashews and cook for 1 more minute.
9. Top with the remaining green onions and serve hot over rice or noodles.
