Ingredients

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup hot coffee

1 cup unsalted butter, softened

1 1/2 cups creamy peanut butter

4 cups powdered sugar

1/3 cup heavy cream

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup peanut butter candies or chopped peanuts

Instructions

1. Preheat the oven to 350°F. Grease and line three 8-inch round cake pans with parchment paper.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3. Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth.

4. Slowly stir in the hot coffee until the batter is fully combined. The batter will be thin.

5. Divide the batter evenly between the prepared pans.

6. Bake for 28 to 32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

7. Cool the cakes in the pans for 10 minutes, then turn them out onto a wire rack and cool completely.

8. For the frosting, beat the softened butter and peanut butter together until light and creamy.

9. Add the powdered sugar gradually, then mix in the heavy cream, vanilla extract, and salt until fluffy.

10. Place one cake layer on a serving plate and spread frosting over the top.

11. Repeat with the second layer, then place the third layer on top.

12. Frost the top and sides of the cake with the remaining peanut butter frosting.

13. Garnish with peanut butter candies or chopped peanuts.

14. Chill for 20 to 30 minutes before slicing for cleaner layers.

Notes

Do not frost the cake until the layers are completely cool, or the peanut butter frosting can soften too much and slide.
