Ingredients

1 lb fresh green beans, trimmed

1/4 cup sliced almonds

1 tbsp olive oil

2 tbsp unsalted butter

1 small shallot, finely diced

2 cloves garlic, minced

1 tbsp fresh lemon juice

1/2 tsp kosher salt

1/4 tsp black pepper

1 tbsp fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil and prepare a bowl of ice water.

2. Add the green beans and blanch for 3 to 4 minutes until bright green and crisp-tender.

3. Transfer the green beans to the ice water, then drain and pat dry.

4. Heat the olive oil in a large skillet over medium heat and toast the sliced almonds for 2 to 3 minutes until golden. Remove and set aside.

5. In the same skillet, melt the butter and cook the shallot for 1 minute.

6. Add the garlic and cook for 30 seconds until fragrant.

7. Add the green beans, salt, and black pepper, then toss for 2 to 3 minutes until heated through.

8. Stir in the toasted almonds and lemon juice.

9. Sprinkle with fresh parsley and serve warm.

Notes

Do not overcook the green beans during blanching, or they can turn soft and lose that classic crisp-tender bite that makes this dish so good.
