1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
2 carrots, peeled and chopped
2 celery stalks, chopped
1 pound boneless, skinless chicken breast or thighs
6 cups low-sodium chicken broth
1 cup long-grain white rice
1/4 cup freshly squeezed lemon juice (about 2 lemons)
1 teaspoon lemon zest
Salt and black pepper, to taste

Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened. Add garlic and cook for 1 more minute.
