Ingredients
4 cups corn kernels
4 tablespoons butter
1 cup heavy cream
4 ounces cream cheese
2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup milk
1 tablespoon cornstarch
1 tablespoon chopped parsley
Instructions
1. Melt the butter in a large skillet or saucepan over medium heat.
2. Add the corn kernels and cook for 3 to 4 minutes, stirring occasionally.
3. Stir in the heavy cream, cream cheese, sugar, salt, and black pepper.
4. Continue stirring until the cream cheese fully melts and the mixture looks smooth.
5. In a small bowl, whisk the milk and cornstarch until fully combined.
6. Pour the cornstarch mixture into the pan and stir well.
7. Cook for 3 to 5 more minutes until the sauce thickens and coats the corn.
8. Taste and adjust seasoning if needed.
9. Spoon into a serving dish and top with chopped parsley before serving.
Notes
Do not boil the sauce too hard after adding the dairy, or it can separate and lose that smooth creamy texture.
