2 carrots, diced

2 celery stalks, diced

6 cups chicken broth

2 cups cooked shredded chicken

1 cup uncooked long-grain white rice

1 cup milk

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

2 tablespoons chopped fresh parsley


Instructions

1. Melt the butter in a large pot over medium heat.

2. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

3. Stir in the garlic and cook for 30 seconds.

4. Sprinkle in the flour and stir well for 1 minute.

5. Slowly pour in the chicken broth while stirring until smooth.

6. Add the shredded chicken, uncooked rice, salt, black pepper, and thyme.

7. Bring the soup to a gentle simmer and cook for 18 to 20 minutes, stirring occasionally, until the rice is tender.

8. Reduce the heat to low and stir in the milk and heavy cream.

9. Warm the soup gently for 3 to 5 minutes without boiling.

10. Stir in the parsley, taste, adjust seasoning if needed, and serve hot.

Notes

Do not let the soup boil after adding the milk and heavy cream, or the texture can turn grainy instead of smooth and creamy.
