Ingredients

2 tablespoons butter

1 small yellow onion, diced

2 medium carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

1/4 cup all-purpose flour

6 cups chicken broth

1 cup uncooked long grain white rice

3 cups cooked shredded chicken

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 cup heavy cream

2 tablespoons chopped fresh parsley


Instructions

1. Melt the butter in a large pot or Dutch oven over medium heat.

2. Add the onion, carrots, and celery, and cook for 6 to 8 minutes until softened.

3. Stir in the garlic and cook for 30 seconds.

4. Sprinkle in the flour and stir well for 1 minute to coat the vegetables.

5. Slowly pour in the chicken broth while stirring until smooth.

6. Add the rice, thyme, salt, and black pepper, then bring to a gentle simmer.

7. Cover partially and cook for 18 to 20 minutes, stirring occasionally, until the rice is tender.

8. Stir in the shredded chicken and cook for 3 to 4 minutes until heated through.

9. Reduce the heat to low and stir in the heavy cream.

10. Warm gently for 2 to 3 minutes without boiling.

11. Stir in the parsley and serve hot.

Notes

Do not boil the soup after adding the cream, or the texture can turn grainy and the broth may separate.
