Ingredients
4 cups green cabbage, finely shredded
1 English cucumber, diced
4 green onions, thinly sliced
1 avocado, diced
1/2 cup Greek yogurt
1/4 cup mayonnaise
1/4 cup fresh parsley
2 tablespoons fresh chives
1 garlic clove
2 tablespoons lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Finely shred the green cabbage and place it in a large mixing bowl.
2. Dice the cucumber, slice the green onions, and add them to the bowl.
3. Cut the avocado into small chunks and set it aside for adding just before tossing.
4. In a blender or food processor, combine the Greek yogurt, mayonnaise, parsley, chives, garlic, lemon juice, olive oil, salt, and black pepper.
5. Blend until the dressing is smooth, creamy, and evenly green.
6. Pour the dressing over the cabbage, cucumber, green onions, and avocado.
7. Toss gently until everything is evenly coated.
8. Chill the salad for 10 to 15 minutes for the best flavor and texture.
9. Give it a final toss and serve cold.
Notes
Do not overdress the salad too far in advance if you want the cabbage to stay especially crisp, and add the avocado last so it keeps its shape.
