Description

Ingredients

2 large chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

2 tablespoons olive oil

2 tablespoons butter

1 small onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 can cream of chicken soup, 10.5 ounces

3 cups cooked white rice

2 tablespoons chopped parsley


Instructions

1. Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and paprika.

2. Heat the olive oil in a large skillet over medium heat. Sear the chicken for 4 to 5 minutes per side until golden brown. Remove and set aside.

3. In the same skillet, melt the butter. Add the chopped onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds.

4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.

5. Stir in the heavy cream and cream of chicken soup until smooth and well combined.

6. Return the chicken to the skillet and spoon some sauce over the top. Cover and simmer for 12 to 15 minutes, or until the chicken is fully cooked through.

7. Serve the chicken over warm cooked rice and spoon plenty of the creamy sauce on top.

8. Finish with chopped parsley and serve hot.

Notes

Do not boil the sauce hard after adding the cream, or it can turn too thick and may separate instead of staying smooth and silky.
