Description

Ingredients

2 cups cooked chicken, shredded or diced

12 ounces rigatoni pasta

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 ounces cream cheese, softened

1 cup sour cream

3/4 cup chicken broth

1 1/2 cups mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

3 cups fresh spinach, chopped

1 can artichoke hearts, drained and chopped

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped parsley


Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. Cook the rigatoni in salted water until just al dente, then drain and set aside.

3. Heat the olive oil in a large skillet over medium heat.

4. Add the chopped onion and cook for 3 to 4 minutes until softened.

5. Stir in the garlic and cook for 30 seconds.

6. Add the cream cheese, sour cream, and chicken broth, stirring until smooth.

7. Mix in the Parmesan cheese, 3/4 cup of the mozzarella, Italian seasoning, salt, and black pepper.

8. Fold in the chopped spinach and artichoke hearts and cook just until the spinach wilts.

9. Add the cooked chicken and drained rigatoni, then stir until everything is evenly coated.

10. Transfer the mixture to the prepared baking dish and spread it evenly.

11. Sprinkle the remaining mozzarella cheese over the top.

12. Bake for 20 to 25 minutes until hot and bubbly and the cheese is melted and lightly golden.

13. Rest for 5 minutes, then garnish with parsley and serve.

Notes

Do not overcook the pasta before baking, or the casserole can turn too soft after it finishes in the oven.
