Ingredients
3 ounces strawberry gelatin mix
1 cup boiling water
20 ounces crushed pineapple, undrained
2 cups fresh strawberries, chopped
2 cups mini marshmallows
8 ounces whipped topping, thawed
8 ounces cream cheese, softened
Instructions
1. In a large mixing bowl, whisk the strawberry gelatin mix into the boiling water until fully dissolved.
2. Stir in the crushed pineapple with its juice and the chopped strawberries until evenly combined.
3. Refrigerate the mixture for 20 to 30 minutes, just until slightly cooled and beginning to thicken.
4. In a separate bowl, beat the softened cream cheese until smooth and creamy.
5. Fold the whipped topping into the cream cheese until no lumps remain.
6. Gently fold the cream cheese mixture into the strawberry mixture until fully combined.
7. Fold in the mini marshmallows.
8. Cover and refrigerate for at least 2 hours, or until chilled and fluffy.
9. Spoon into a serving bowl or dessert cups and serve cold.
Notes
Do not mix the cream cheese into the strawberry base while it is still warm, or the texture can turn runny and lose that fluffy finish.
