3 cloves garlic, minced
2 tablespoons tomato paste
1 can (28 ounces) crushed tomatoes
2 cups vegetable broth
1 teaspoon sugar
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup heavy cream
2 tablespoons fresh basil, chopped
Instructions
1. Heat the butter and olive oil in a large pot over medium heat.
2. Add the chopped onion and cook for 5 to 6 minutes until softened.
3. Stir in the garlic and cook for 30 seconds.
4. Add the tomato paste and cook for 1 minute, stirring well.
5. Pour in the crushed tomatoes and vegetable broth.
6. Add the sugar, dried basil, salt, and black pepper.
7. Bring the soup to a gentle simmer, then reduce the heat and cook for 20 to 25 minutes.
8. Blend the soup until smooth using an immersion blender or carefully in batches in a blender.
9. Return the soup to low heat and stir in the heavy cream.
10. Warm through for 2 to 3 minutes without boiling.
