1 lb cod fillets

1/2 cup all purpose flour

2 large eggs

1 cup panko breadcrumbs

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 tsp dried parsley

olive oil spray as needed

1 lemon cut into wedges


Instructions

1. Pat the cod fillets dry with paper towels and cut into evenly sized pieces if needed.

2. Place the flour in one shallow bowl, beat the eggs in a second bowl, and mix the panko, Parmesan, garlic powder, paprika, salt, black pepper, and dried parsley in a third bowl.
