Ingredients
2 pounds boneless skinless chicken thighs
1/2 cup honey
1/2 cup low sodium soy sauce
1/4 cup ketchup
3 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons water
2 green onions, sliced
1 tablespoon sesame seeds
3 cups cooked rice
Instructions
1. Place the chicken thighs in the crockpot in an even layer.
2. In a medium bowl, whisk together the honey, soy sauce, ketchup, minced garlic, rice vinegar, and sesame oil until fully combined.
3. Pour the sauce over the chicken, making sure all the pieces are coated well.
4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is tender and fully cooked.
5. In a small bowl, stir together the cornstarch and water to make a smooth slurry.
6. Pour the slurry into the crockpot during the last 20 to 30 minutes of cooking and stir gently.
7. Let the sauce thicken, then spoon the chicken and sauce over cooked rice.
8. Garnish with sliced green onions and sesame seeds before serving.
Notes
Do not add the cornstarch slurry at the beginning, or the sauce can turn gluey and lose its smooth glossy finish.
