Ingredients

For the Cinnamon Dough:

2 ¾ cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¼ cup granulated sugar

½ tsp salt

½ cup whole milk (warm)

¼ cup unsalted butter (melted)

1 egg

1 tsp vanilla extract

For the Cinnamon Filling:

¾ cup brown sugar (packed)

1 ½ tbsp ground cinnamon

¼ cup unsalted butter (softened)

For the Cream Filling:

2 cups heavy cream

1 cup mascarpone or cream cheese (softened)

¾ cup powdered sugar

1 tsp vanilla extract

Optional Garnish:

Powdered sugar for dusting

Cream cheese glaze or caramel drizzle (optional)


Instructions

  1. Make the Dough: Combine flour, sugar, salt, and yeast. Mix warm milk, melted butter, egg, and vanilla separately, then combine with the dry ingredients. Knead for 8 minutes until smooth. Let rise for 1–1.5 hours.
  2. Prepare Cinnamon Filling: Mix brown sugar and cinnamon. Set aside butter for spreading.
  3. Roll and Slice: Roll dough into a rectangle, spread with butter, sprinkle cinnamon sugar, roll tightly, and slice into ¾-inch rolls.
  4. Bake Rolls: Preheat oven to 350°F (175°C). Bake rolls on a lined sheet for 20–25 minutes until golden. Let cool.
  5. Make Cream Filling: Whip cream to soft peaks. In a separate bowl, blend mascarpone with sugar and vanilla. Fold together.
  6. Assemble Cake: Layer rolls and cream filling on a plate in 3-4 alternating layers. Top with more rolls and dust or drizzle.
  7. Chill: Refrigerate for 4+ hours, ideally overnight. Slice and serve chilled.
