Ingredients

1 pie crust

16 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1/2 cup sour cream

1/4 tsp salt

3/4 cup brown sugar

1/2 cup light corn syrup

2 tbsp unsalted butter, melted

1 large egg

1 tsp vanilla extract

1 1/2 cups pecan halves


Instructions

1. Preheat the oven to 350°F and fit the pie crust into a 9-inch pie dish.

2. In a large bowl, beat the cream cheese and granulated sugar until smooth.

3. Add 1 teaspoon vanilla extract, 2 eggs, sour cream, and salt, then mix until creamy.

4. Pour the cheesecake filling into the prepared crust and smooth the top.

5. In another bowl, whisk together the brown sugar, corn syrup, melted butter, 1 egg, and 1 teaspoon vanilla extract.

6. Stir in the pecan halves until coated.

7. Carefully spoon the pecan topping over the cheesecake layer.

8. Bake for 50 to 60 minutes, or until the center is mostly set with a slight jiggle.

9. Cool completely at room temperature.

10. Chill for at least 4 hours before slicing and serving.

Notes

Do not overbake the pie, or the cheesecake layer can turn dry and crack. Pull it from the oven when the center still has a slight wobble, then let it finish setting as it cools and chills.
