Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
24 ounces cream cheese, softened
3/4 cup granulated sugar
1/2 cup sour cream
2 teaspoons vanilla extract
3 large eggs
2 tablespoons all-purpose flour
1/2 cup pastel jimmies sprinkles
1 cup whipped topping, optional for serving
2 tablespoons extra pastel sprinkles, optional for topping
Instructions
1. Preheat the oven to 325°F and line a 9×13-inch baking pan with parchment paper.
2. In a medium bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons sugar until evenly combined.
3. Press the crust mixture firmly into the bottom of the prepared pan.
4. Bake the crust for 8 to 10 minutes, then let it cool slightly.
5. In a large bowl, beat the softened cream cheese until smooth.
6. Add 3/4 cup sugar and mix until creamy.
7. Mix in the sour cream and vanilla extract.
8. Add the eggs one at a time, mixing on low speed just until combined.
9. Stir in the flour until smooth.
10. Gently fold in the pastel sprinkles.
11. Pour the cheesecake filling over the crust and smooth the top.
12. Bake for 32 to 38 minutes, until the edges are set and the center still jiggles slightly.
13. Turn off the oven, crack the door, and let the bars rest inside for 10 minutes.
14. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
15. Lift the chilled cheesecake out of the pan, slice into bars, and top with whipped topping and extra sprinkles if desired.
Notes
Do not overmix the batter after adding the eggs, because too much air can cause the cheesecake bars to puff up and crack instead of baking smooth and creamy.
