Ingredients

2 tablespoons butter

1 small onion, diced

2 medium carrots, sliced

2 celery stalks, sliced

2 cloves garlic, minced

1/4 cup all-purpose flour

4 cups chicken broth

1 cup milk

1/2 cup heavy cream

3 cups cooked shredded chicken

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1 can refrigerated biscuits, 8 count

1 tablespoon fresh parsley, chopped


Instructions

1. Melt the butter in a large deep skillet or Dutch oven over medium heat.

2. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

3. Stir in the garlic and cook for 30 seconds.

4. Sprinkle the flour over the vegetables and stir well to coat.

5. Slowly pour in the chicken broth while stirring until smooth.

6. Add the milk and heavy cream, then stir well.

7. Stir in the shredded chicken, salt, black pepper, and dried thyme.

8. Simmer for 5 to 7 minutes until the mixture thickens slightly.

9. Cut each biscuit into 4 pieces.

10. Arrange the biscuit pieces over the simmering chicken mixture.

11. Cover the pan with a lid and reduce the heat to low.

12. Cook for 12 to 15 minutes until the biscuit dumplings are puffed and cooked through.

13. Sprinkle with fresh parsley and serve hot.

Notes

Do not lift the lid too often while the biscuit dumplings are steaming, or they may not cook through properly and stay dense in the center.
