Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 medium yellow onion, diced
2 cloves garlic, minced
3 cups Yukon Gold potatoes, peeled and diced small
2 cups cooked corned beef, chopped
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon chopped fresh parsley
4 eggs, optional for serving
Instructions
1. Bring a pot of salted water to a boil and cook the diced potatoes for 5 to 7 minutes until just barely tender. Drain well and let them steam dry.
2. Heat the olive oil and butter in a large skillet over medium heat.
3. Add the diced onion and cook for 4 to 5 minutes until softened.
4. Stir in the potatoes, black pepper, and paprika. Spread everything into an even layer.
5. Cook the potatoes for 8 to 10 minutes, turning occasionally, until they are golden and crisp on the edges.
6. Add the chopped corned beef and minced garlic.
7. Stir gently, then press the hash back into the skillet and cook for 5 to 7 minutes until the beef is hot and the mixture is nicely browned.
8. Sprinkle with fresh parsley and serve hot.
9. Top with fried eggs if desired.
Notes
Do not stir the hash too often once it hits the skillet, or the potatoes will break apart and steam instead of forming those crisp golden edges.
