Ingredients
2 tablespoons olive oil
2 tablespoons butter
4 cups russet potatoes, peeled and diced small
1 medium yellow onion, diced
2 cloves garlic, minced
3 cups cooked corned beef, diced
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons chopped fresh parsley
4 eggs, optional for serving
Instructions
1. Heat the olive oil and butter in a large skillet over medium heat.
2. Add the diced potatoes in an even layer and cook for 10 to 12 minutes, stirring only occasionally, until they begin to brown and crisp.
3. Add the diced onion and cook for 4 to 5 minutes until softened.
4. Stir in the garlic and cook for 30 seconds until fragrant.
5. Add the diced corned beef, black pepper, and paprika, then gently stir to combine.
6. Spread the mixture back into an even layer and cook for 5 to 7 more minutes so the hash develops crispy edges.
7. Sprinkle with chopped parsley.
8. If desired, fry the eggs in a separate skillet and serve one egg over each portion.
9. Serve hot with toast or fresh fruit.
Notes
Do not stir the potatoes too often at the beginning or they will steam instead of developing the crispy golden crust that gives this hash its best texture.
