Ingredients

1 large cucumber

2 large carrots

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey

1 tablespoon soy sauce

1 garlic clove, minced

1 tablespoon sesame seeds

2 tablespoons chopped fresh parsley or cilantro

1/4 teaspoon salt

1/8 teaspoon black pepper


Instructions

1. Wash the cucumber and carrots well. Slice the cucumber into thin ribbons or thin half moons, and peel or julienne the carrots into thin strips.

2. Place the cucumber and carrot in a large mixing bowl.

3. In a small bowl, whisk together the rice vinegar, sesame oil, honey, soy sauce, minced garlic, salt, and black pepper until well combined.

4. Pour the dressing over the vegetables and toss gently until everything is evenly coated.

5. Add the sesame seeds and chopped parsley or cilantro, then toss again.

6. Chill the salad for 10 to 15 minutes before serving for the best flavor and texture.
