Description

Get ready to make a homemade pie crust that is buttery, crisp, tender, and beautifully flaky with every bite. This Easy Flaky All Butter Pie Crust is perfect for everything from holiday desserts to quick breakfast quiche, easy dinner pies, savory brunch ideas, and classic homemade baking. It uses simple pantry staples, comes together with minimal fuss, and gives you reliable results whether you are making sweet food ideas or savory food ideas for family and friends.

Ingredients

2 1/2 cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, very cold and cut into cubes

6 to 8 tablespoons ice water

Instructions

1. In a large mixing bowl, whisk together the flour, salt, and sugar.

2. Add the cold butter cubes and cut them into the flour using a pastry cutter or your fingertips until the mixture looks crumbly with pea-sized butter pieces throughout.

3. Add the ice water 1 tablespoon at a time, mixing gently after each addition, until the dough just starts to come together when pressed.

4. Turn the dough onto a lightly floured surface and shape it into a disk without overworking it.

5. Wrap the dough tightly and chill it in the refrigerator for at least 1 hour.

6. Roll the chilled dough into a 12-inch circle on a lightly floured surface.

7. Transfer it to a 9-inch pie dish, press it in gently, and trim or crimp the edges.

8. Chill the shaped crust for 15 to 20 minutes before filling or blind baking.

9. Bake as needed for your pie recipe, or blind bake at 375°F until lightly golden if using for a pre-baked shell.

Notes

Do not let the butter get soft while making the dough, because warm butter will blend too fully into the flour and you will lose the flaky layers.
