These Easy Glazed Stuffed Cherry Pie Cookies are the kind of sweet treat that instantly makes any dessert table feel more exciting. With a soft buttery cookie base, a gooey cherry pie filling tucked inside, and a smooth vanilla glaze finished with festive sprinkles, they deliver all the charm of a mini pie in cookie form. They are perfect for holiday baking, Valentine desserts, party trays, easy dessert ideas, sweet snack cravings, and fun food ideas when you want something pretty, simple, and full of fruity flavor.

Ingredients

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

3/4 cup cherry pie filling, chopped if needed

1 1/2 cups powdered sugar

2 to 3 tablespoons milk

2 tablespoons pink and red sprinkles

Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.

4. Add the egg and vanilla extract, then mix until smooth and fully combined.

5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Scoop about 2 tablespoons of dough and flatten it slightly in your hand.

7. Place 1 to 2 teaspoons of chopped cherry pie filling in the center.

8. Top with a small piece of dough and gently seal the edges, then shape into a round cookie.

9. Place the stuffed cookies on the prepared baking sheet with space between each one.

10. Bake for 12 to 15 minutes, until the cookies are set and lightly golden around the edges.

11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

12. In a small bowl, whisk together the powdered sugar and milk until smooth.

13. Spoon or drizzle the glaze over the cooled cookies.

14. Add the sprinkles right away so they stick to the glaze.

15. Let the glaze set before serving or storing.

Notes

Be careful not to overfill the cookies with cherry filling, or the centers can leak too much during baking and make the dough harder to seal neatly.
