2 pounds beef chuck, cut into 1 1/2-inch cubes
3 tablespoons all-purpose flour

1 medium onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
4 cups beef broth
1 teaspoon dried thyme
1 bay leaf
1 pound Yukon gold potatoes, cut into chunks
4 medium carrots, peeled and cut into chunks
2 tablespoons fresh parsley, chopped
Instructions
1. Pat the beef dry with paper towels, then toss it with the flour, salt, and black pepper until evenly coated.
2. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.
3. Brown the beef in batches, making sure not to overcrowd the pot, then transfer the browned beef to a plate.
4. Add the diced onion to the same pot and cook for 4 to 5 minutes until softened.
5. Stir in the minced garlic and cook for 30 seconds until fragrant.
6. Add the tomato paste and stir for 1 minute to deepen its flavor.
7. Pour in the Worcestershire sauce and beef broth, scraping the bottom of the pot to loosen the browned bits.
