Ingredients

1 1/4 cups all-purpose flour

2 large eggs

1/2 cup buttermilk

1/2 cup brewed coffee, cooled

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 cup unsalted butter, softened

3 cups powdered sugar

2 tablespoons heavy cream

2 teaspoons vanilla extract

green and white sprinkles, for topping


Instructions

1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large bowl, whisk together the sugar, eggs, buttermilk, brewed coffee, vegetable oil, and vanilla extract until smooth.

4. Add the dry ingredients to the wet ingredients and mix just until combined.

5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

6. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

7. Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.

8. For the frosting, beat the softened butter until creamy.

9. Gradually add the powdered sugar, then mix in the heavy cream and vanilla extract until fluffy.
