Ingredients
1 cup rolled oats
1 cup milk
1/2 cup Greek yogurt
1/2 cup fresh orange juice
1 teaspoon orange zest
1 tablespoon chia seeds
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 pinch salt
1/4 cup granola
Orange slices for topping
Fresh mint for topping
Instructions
1. In a medium bowl or jar, whisk together the milk, Greek yogurt, fresh orange juice, orange zest, maple syrup, vanilla extract, and salt until smooth.
2. Stir in the rolled oats and chia seeds until everything is evenly combined.
3. Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
4. Stir the oats before serving and add a splash of milk if you want a looser texture.
5. Spoon into jars or bowls and top with granola, orange slices, and fresh mint before serving.
Notes
Do not add the granola the night before, or it will lose its crunch and become soggy by morning.
