Description

Ingredients

2 pounds boneless skinless chicken breasts

2 cups salsa

1 can black beans, drained and rinsed

1 cup frozen or canned corn, drained

1 can diced tomatoes

1 cup chicken broth

1 packet taco seasoning

1 small onion, chopped

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped


Instructions

1. Add the chopped onion, garlic, black beans, corn, diced tomatoes, salsa, chicken broth, olive oil, taco seasoning, salt, and black pepper to the crock pot. Stir to combine.

2. Place the chicken breasts into the crock pot and spoon some of the mixture over the top.

3. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.

4. Remove the chicken breasts, shred them with two forks, then return the shredded chicken to the crock pot.

5. Stir everything together well and let it sit for 5 more minutes so the flavors blend.

6. Serve hot with shredded cheddar cheese and chopped cilantro on top.

Notes

Do not add too much extra liquid, or the salsa chicken can turn out thinner than you want since the chicken releases moisture as it cooks.
