Ingredients
2 pounds russet potatoes
3 tablespoons butter
1 small onion, finely diced
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 tablespoon butter or cooking spray for greasing the baking dish
Instructions
1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
2. Peel the potatoes if desired, then slice them thinly into even rounds.
3. Melt the butter in a saucepan over medium heat.
4. Add the onion and cook for 3 to 4 minutes until softened.
5. Stir in the garlic and cook for 30 seconds.
6. Sprinkle in the flour and stir constantly for 1 minute to form a smooth roux.
7. Slowly whisk in the milk and heavy cream until the mixture is smooth.
8. Cook for 3 to 5 minutes, stirring often, until the sauce begins to thicken.
9. Stir in the salt, black pepper, thyme, 1 cup cheddar cheese, and 1/4 cup Parmesan cheese.
10. Layer half of the sliced potatoes in the prepared baking dish.
11. Spoon half of the cream sauce over the potatoes.
12. Repeat with the remaining potatoes and the remaining sauce.
13. Top with the remaining cheddar cheese and Parmesan cheese.
14. Cover the dish with foil and bake for 45 minutes.
15. Remove the foil and bake for 25 to 30 minutes more until the potatoes are tender and the top is golden.
16. Let the dish rest for 10 minutes before serving.
Notes
Slice the potatoes evenly and keep them fairly thin, otherwise some layers may stay firm while the top becomes too brown.
