Ingredients
1 lb smoked sausage, sliced into rounds
1 lb baby potatoes, halved or quartered
2 cups broccoli florets
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 medium zucchini, sliced
1 medium red onion, cut into wedges
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped
Instructions
1. Preheat the oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.
2. Slice the smoked sausage into bite-sized rounds and chop the potatoes, broccoli, bell peppers, zucchini, and red onion into even pieces.
3. Add the sausage and vegetables to the sheet pan.
4. Drizzle everything with olive oil, then sprinkle on the garlic powder, Italian seasoning, paprika, salt, and black pepper.
5. Toss well until the sausage and vegetables are evenly coated.
6. Spread everything into a single layer so it roasts evenly.
7. Bake for 30 to 35 minutes, stirring halfway through, until the potatoes are tender and the vegetables are lightly browned.

Notes
