Ingredients
1/4 cup gluten-free all-purpose flour
2 tablespoons unsweetened cocoa powder
2 tablespoons granulated sugar
1/4 teaspoon baking powder
pinch salt
3 tablespoons milk
2 tablespoons neutral oil or melted butter
1/4 teaspoon vanilla extract
1 tablespoon mini chocolate chips
1 teaspoon extra chocolate chips for topping
Instructions
1. Add the gluten-free flour, cocoa powder, sugar, baking powder, and salt to a microwave-safe mug. Stir well to combine.
2. Pour in the milk, oil or melted butter, and vanilla extract. Mix until the batter is smooth and no dry spots remain.
3. Stir in the mini chocolate chips, then sprinkle the extra chocolate chips on top.
4. Microwave on high for 60 to 90 seconds, until the top looks set but the center is still soft.
5. Let the mug cake rest for 1 to 2 minutes before serving.
Notes
Do not overcook the mug cake or it can turn rubbery very quickly, so start checking at 60 seconds and add only a few more seconds if needed.
