Ingredients

1 1/2 cups cottage cheese

3 large eggs

1/2 cup plain Greek yogurt

1/4 cup honey

1 cup rolled oats

1 tablespoon lemon zest

2 tablespoons lemon juice

1 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups fresh blueberries

1 tablespoon cornstarch

1 tablespoon powdered sugar


Instructions

1. Preheat the oven to 350°F and lightly grease or line an 8-inch square baking dish with parchment paper.

2. Add the cottage cheese, eggs, Greek yogurt, honey, rolled oats, vanilla extract, lemon zest, lemon juice, baking powder, and salt to a blender or food processor. Blend until smooth and creamy.

3. In a small bowl, toss the blueberries with the cornstarch.

4. Pour the blended batter into a mixing bowl and gently fold in most of the blueberries, saving a small handful for the top.
