Ingredients

1 lb ground beef

1 small yellow onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1/2 cup water

2 cups cooked white rice

1 cup refried beans

2 cups red enchilada sauce, divided

6 large flour tortillas

1 1/2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

2 tbsp chopped fresh cilantro


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain excess grease.

3. Add the garlic and taco seasoning, then pour in the water and stir well. Let it simmer for 1 to 2 minutes.

4. Stir in the cooked rice, refried beans, and 1/2 cup of the enchilada sauce until the filling is fully combined and heated through.

5. Spoon the beef mixture evenly into the tortillas. Add a little cheddar cheese inside each burrito, then roll them tightly.

6. Place the burritos seam-side down in the prepared baking dish.

7. Pour the remaining enchilada sauce over the burritos, then sprinkle the cheddar and Monterey Jack cheese evenly on top.

8. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly.

9. Let the burritos rest for 5 minutes, then top with sour cream and chopped cilantro before serving.
